Brasserie de Brunehaut from the Tournai region produces a number of organic and gluten-free beers: Brunehaut Blanche, Blonde, Triple, Ambrée and Pom’Fraiz. These beers contain only water, yeast, hop and malt. They are brewed with three varieties of hops and several types of malt. The brewer uses organic barley, grown locally, and has it malted according to his specifications; he is also researching traditional grain varieties as he strives to refine the quality and taste of his beers. Saint-Martin inherited the tradition of the former Saint-Martin abbey in Tournai and it belongs to the ranks of recognised Belgian abbey beers that also contain herbs. These are full-mouthed and complex degustation beers. The blonde abbey beer is characterised by touches of juniper berries whereas the brown beer contains liquorice and the Christmas beer has hints of cloves and cinnamon. Strikingly, all of the Brunehaut beers, including the Saint-Martin, re-ferment in the bottle and in the barrel. In-barrel re-fermentation is a complex process which is why many brewers limit themselves to re-fermentation in the bottle.
